Leather isn't graded like you may think. You tend see leather grains graded in order of best to worst quality as follows: Full grain, top grain, and split (often referred to as "genuine").

As for safety, full-grain cowhide construction guarantees ... but style-wise the Schott’s shiny leather, silver detail, and busy layout are a little too much for some riders.
