Costco probably does it this way to get the servings into more uniform sizes. I have not bought an entire cap portion yet, but when I do, I will cut it into reasonably sized steaks or cook the whole thing like a flank steak, then slice.

The rib eye is clearly a better choice because it’s a better cut and also the prime grade is better than the choice grade. Also, try to select a steak that has more intramuscular fat, which is the white spider web looking strands inside the muscle. Try to avoid the big white globs of fat you see in the middle rib eye steak.

Was at Costco today had they both the Prime caps and the Prime eyes (with no caps) for $18.99, but no Prime ribeyes (with caps AND eyes). Yet they were selling Prime strips for $11.99/lb. So that's how they're making money on the bastardized ribeyes - ripping off the caps then selling both pieces (spinalis cap and longissimus eye) separately ...

Chatted up one of the butchers who mentioned Costco actually had to buy the entire cow, which means they will end up with some cuts not normally stocked. Grabbed two skirt steaks, one pack of sirloin cap steaks and one pack of center cut ribeyes. Prices slightly higher than prime (caps were 11.99 prime vs 14.99 Wagyu).

2023年1月24日 · Partially true. The muscle does run from a strip, to ribeye, to chuck... But once the cap is taken off the ribeye for these steaks, the remainder is sold as "eye of ribeye" or ribeye eye steaks. This is only done with prime grade ribeyes choice grade ribeyes are cut and sold as the whole steak, with both cap and eye included.

2021年12月16日 · TBH, I've not seen ribeye caps with gristle in Costco meat display cases and the two processors I buy from, I eyeball every package that I buy. I'm not disputing your observations or casting doubt on your cooking skills, ribeye caps shouldn't carry much - if any - connective material.

For as long as I can remember, Costco has been incredibly conservative in sample sizes. Like comically small to the point it's not worth it. I can't imagine what rib eye crumbs they were giving people sample size wise. I don't think I've had but 3 instore samples in the last 10 years I've been to Costco. 1. I go to early, and 2. I'm not a grifter.
