It's onion harvest time! I look for the tops of the onions to start flopping over and for a thick skin to develop on the outside of the onions. Then I know it’s time to pull. I usually dry them in very shallow piles maybe only one or two onions thick on wire racks, with good airflow, and out of direct sun and rain. It’ll take several weeks for them to cure.
